Garbanzo Bean Salad


Ingredients:
  • 2 medium fresh tomatoes, chopped
  • 2 cups peeled diced cucumber
  • 1/2 medium onion, finelly minced
  • 2 medium cloves garlic, pressed
  • 2 cups garbanzo beans, drained well
  • 3 TBS fresh lemon juice
  • 3 TBS chopped basil leaves
  • 2 TBS extra virgin olive oil
  • salt and cracked pepper to taste
  • romaine lettuce leaves to serve
Instructions:
Mix all ingredients except lettuce together and chill. Serve on a bed of lettuce.
