Quick Spaghetti


Ingredients:
  • Polish sausage -this is optional, cut into pieces
  • Mushrooms, roughly chopped
  • Onion, diced
  • red or yellow pepper, cut into small pieces
  • 1 carrot, grated
  • 2 Cucumbers in brine, cut into pieces
  • Organic tomato sauce
  • olive oil
  • Spaghetti, wholewheat
Instructions

Boil water in a pan, add some salt, add spaghetti and cook al dente.

Heat up olive oil in a wok. Add sausage. After 2 mins add onion and mushrooms, fry stirring for about 3 mins, add pepper and carrot. After 2 mins add tomato sauce and cucumbers in brine, cook for another 2-3 mins. Serve with spaghetti and some grated cheese on top.

Chicken, Broccoli and Kale Stir Fry


Ingredients:
  • 100g curly kale, cut
  • 200g broccoli, cut into small pieces
  • 150g mushrooms, chopped roughly
  • 2 chicken breasts, cut into small pieces
  • 1 tablespoon olive oil
  • 3 tablespoons tamari sauce
  • 1 tablespoon sesame seeds
  • 2 garlic cloves, crushed
Instructions:

Heat the oil in a wok until hot. Add the garlic and mushrooms. Stir well and cook for 5 mins, until the mushrooms are lightly browned and their juice has evaporated.
Add the chicken to the pan and cook on a high heat for 3 minutes. Add the broccoli, stir and cover for 3 mins.
Add the kale. Cover for 2 minutes, until it starts to wilt, remove the wok from the heat. Mix the sesame seeds with tamari, add to the pan and mix well. Serve immediately.

The not necessarily Sunday Roast


Ingredients:
  • Free range chicken leg portions/drumsticks, thighs etc
  • Vegetables: brussel sprouts, courgette-thickly sliced, carrot-thickly sliced, young potatoes-cut in half, bell pepper, yellow or red-thickly sliced, onion- halved and thickly sliced, you can also add broccoli and cauliflower
  • Spices: chicken spice, turmeric, cayenne pepper, dried dill, salt
  • Olive oil
Instructions:

Wash the chicken and put in a bowl, spice it with chicked spice and leave for a while.

Preheat oven to 250C fan.

Put some olive oil at the bootom of the oven proof dish. Add vegetables and sprinkle them with salt, turmeric, cayenne pepper and dill. Put the chicken on top. Cover the dish with the lid or with the kitchen foil and put in the oven. After about 15 minutes pour some water over the vegs, cover again. After about half and hour when the vegetables start getting softer  uncover and put back in the oven, roast until the chicken gets brown and vegs are soft. Serve and enjoy!

Chicken breast with vegetables and wholewheat spaghetti


Ingredients:
  • 2 chicken breasts, cut into small pieces
  • spring onions, thinly cut
  • red bell pepper, cut into small pieces
  • 3 garlic cloves, minced
  • broccoli, cut into bit size pieces
  • lemon juice of 2 lemons
  • tamari sauce, 4 tbsp
  • wholewheat spaghetti, cooked and drained
  • black pepper
Instructions

Pour tamari sauce, lemon juice and garlic over chicken and leave it to marinate for 1 hour.
Cook broccoli in salted water for 5 mins and then drain.
When ready heat up a little bit of oil on a wok and add the chicken without the marinade, leave it for later. After about 5 mins add the bell pepper, broccoli, spring onion and spaghetti and also the marinade. Fry for few minutes longer, add pepper to taste.

This is a really easy, quick and delicious dish!

Couscous with Pineapple and green beans


Ingredients:
  • couscous, 1/3 cup
  • green beans
  • pineapple, cut into pieces
  • 1 red onion, diced
  • pumpkin seeds
  • 1 tablespoon olive oil
  • salt and pepper to taste
Instructions

Cook green beans in water with added salt, not too long so that it's not too soft. Once cooked, drain it and add pepper. Put couscous in a pan and add boiling water, 1 cm above the couscous.
Heat up frying pan and add pumpkin seeds, dry fry them for a min and then add oil and onion, after couple of minutes add green beans and couscous, add salt and pepper to taste. As the last thing add pineapple, fry for 1 more minute and the dish is ready!

Celeriac Salad


Ingredients:
  • Half of medium celeriac, grated
  • 1 apple, grated
  • lemon juice of half lemon
  • non GMO soya cream
  • salt and pepper to taste
Instructions

Mix celeriac and apple, add lemon juice, then add a little bit of cream and salt and pepper to taste
